dc.description.abstractAbstract This chapter focuses on the bioactive compounds present in the cherimoya pulp. Cherimoya, like most fruits, is an important source of natural compounds considered as bioactives. In the edible part of cherimoya, compounds such as polyphenols, tocopherols, phytosterol, diterpernes, and triterpenes have been identified. Some constituents of cherimoya pulp have been associated with different biological activities. In addition, cherimoya pulp is a rich source of bioactive compounds, and their intake can promote the body's defenses and keep people healthy; these compounds may be used to develop pharmaceuticals or nutraceutical agents. The identification, bioavailability and effect of the recommended doses of bioactive compounds are of major importance in order to understand the underlying mechanisms of action and interaction of natural products after ingestion and metabolization in human body. Identification and quantification of the phytochemicals present in the edible part of the fruits have gained importance in recent years, mainly for their potential benefits to human health.es, en
